The culmination of François Isambert's decade-long vision that began in 2008 at the historic Pisciculture de La Fajolle, these troutlings represent France's first certified organic tinned fish project. Each tin contains rainbow trout (Oncorhynchus mykiss) aged at least 8 months and weighing approximately 15g, raised in crystal-clear mountain springs according to rigorous organic standards. The fish are steamed and hand-canned without freezing in a traditional French cannery, preserving their exceptional texture that remarkably resembles their wild counterparts.
