Galicia has been canning seafood for over a century. The factories, the methods, the recipes: most of them have stayed exactly the same, and that's largely a good thing. But Cristóbal Fernández grew up watching his mother work in a canning factory for fifteen years and decided he had a different question to ask: what happens when you take all of that tradition and start getting curious about it? La Curiosa is his answer. Founded in 2020 out of Santiago de Compostela, it's a young brand with deep roots in Galician conservas culture and a genuine appetite for doing things a little differently.
What you'll find in their tins: premium Galician seafood sourced at peak season from the Ría de Arousa, packed by hand in partnership with some of the most respected factories in the region, and finished with flavor combinations that don't exist anywhere else in the conservas world. The Ría de Arousa is the largest of Galicia's five major estuaries and one of the most productive stretches of coastline in Europe. Mussels, clams, cockles, scallops, sardines. The waters here are cold, nutrient-rich, and tightly regulated. The canning tradition in this region goes back to the late 1800s, and the factories that have been operating here for generations are some of the most respected in the world.
La Curiosa works with two of the best: Real Conservera Española and Portomar, both known for traditional methods that most modern producers have long since automated. Fish is still hand-packed. Sauces are still made from natural ingredients with no additives. Pieces are selected individually and positioned by skilled workers to ensure the kind of presentation that actually matters when you open a tin.
What Cristóbal brought to this infrastructure was a different kind of curiosity. The same seafood, the same craft, but with flavor combinations that lean into global influences without ever losing their Galician foundation. The result is a lineup that ranges from a straight-up excellent sardine in olive oil to a ventresca in green curry that genuinely surprises people who didn't expect that to work as well as it does.
