Calma & Chicha
Calma & Chicha comes from El Capricho, a family-run cannery in Santoña, a small town on Spain's Cantabrian coast often called the cradle of canned anchovies. El Capricho built its name on anchovies and Bonito del Norte. Calma & Chicha is its newer, more playful label, made to bring Cantabrian tins to a wider and more international crowd.
The brand is built around two sisters. Calma is a peaceful, kind-hearted sardine who stands up for the sea. Chicha is a mussel with a big personality and very little patience when she's hungry. They show up in bright colors on every tin, but the contents are the serious part: Sardina pilchardus from the Cantabrian Sea, packed in olive oil with a short ingredient list.
The 16/20 Small Sardines in Hot Olive Oil fit 16 to 20 little sardines in each tin and add a mild guindilla chili heat that wakes up the fish without taking it over. Eat them with a fork straight from the tin, pile them onto toasted bread, or toss them with warm pasta and a squeeze of lemon.
