Good To Know

A Massachusetts oyster farm in Duxbury that moved into conservas. In 2023 they opened a cannery in New Bedford, one of the first seafood canneries to open on the East Coast in decades.

Shellfish in the Spanish conservas format: surfclams, razor clams, mussels, and scallops in oil, brine, and sauces. Every step at the cannery is done by hand, from cooking to sealing.

Their own farm and nearby New Bedford, the highest-value commercial fishing port in the United States. Some tins are produced in partnership with Conservas Mariscadora in Galicia, applying Spanish technique to American shellfish.

Same format, different water. The species are North Atlantic rather than Galician, so the flavors read colder and brinier. The processing follows Spanish practice closely, which is deliberate.

The surfclams. They are the product the cannery started with, grown on their own farm, and they show what the Spanish format does with cold North Atlantic shellfish.
