The Cracker Flight: Three Tins, One Board, Zero Cooking

Some snacks need a plan. A cracker flight doesn't. Open three tins, set out a stack of crackers, and let people build their own bite. It works for a table of guests who want something to pick at while the conversation runs, and it works just as well when it's a Tuesday night and you want a proper little spread for one. No stove, no timer, no cleanup beyond a cutting board.

This one uses three tins that couldn't be more different from each other: a spicy mackerel, a clean and briny salmon, and a curried trout with some crunch on top. One cracker base, three completely different directions. Here's how we built each one, plus a few easy swaps if your fridge looks a little different than ours.

Mackerel, Hummus & Hot Sauce

Smoky, spicy, and the first one to disappear off the board

The Build

Cracker + a swipe of hummus + Angelo Parodi mackerel + a drizzle of hot sauce

  1. Spread a thick layer of hummus on your cracker of choice.
  2. Top with a piece of mackerel, straight from the tin.
  3. Finish with a light drizzle of hot sauce.

💡 Tip: Not big on heat? Skip the hot sauce and add a squeeze of lemon instead. The ginger and chili already in the tin bring plenty of kick on their own.

Salmon, Goat Cheese & Pickled Red Onion

The Build

Cracker + whipped goat cheese + Maruxaina salmon + pickled red onion

  1. Spread a layer of soft goat cheese on your cracker.
  2. Add a flake or two of salmon on top.
  3. Finish with a few strands of pickled red onion.

💡 Tip: No goat cheese on hand? Cream cheese or a soft herbed cheese works just as well. Not into pickled onion? Capers or a little fresh dill get you to the same place.

Curry Trout & Potato Chips

The Build

Cracker + José Gourmet trout in curry sauce + a couple of potato chips

  1. Spoon the trout and a little of its curry sauce directly onto the cracker.
  2. Tuck a potato chip in on top for crunch.
  3. Eat immediately, before the chip goes soft.

💡 Tip: Want more heat? A few dashes of hot sauce play surprisingly well with the curry. For a sweeter crunch, swap the potato chip for a plantain chip.

Pro Tips for Your Cracker Flight

⏱️ 01 — Build Right Before Serving

Crackers go soft fast once they're topped. Set out the components and assemble to order, or build no more than 15 to 20 minutes before people start eating.

📈 02 — Arrange Mild to Bold

Lay the board out so people taste the salmon first, then the mackerel, then the curry trout. Starting mild and working up to bolder flavors means every bite still stands out.

🍪 03 — Match Your Cracker to the Topping

Wetter toppings like the curry trout need a sturdier cracker that can hold up. Lighter toppings, like the salmon and goat cheese, do well on something thinner and more delicate.

🎨 04 — Let the Tins Do the Styling

Set the open tins right on the board next to their crackers. It looks great, and it lets guests see exactly what they're eating and go back for more without asking.

👥 05 — Scale It for a Crowd

Keep the three flavor profiles and just multiply the tins. One tin of each covers about four to six people as part of a bigger spread.

These three combinations are a starting point, not a rulebook. Once you've got a stack of crackers and a few tins open, the pairings are really up to you: swap the cheese, change the crunch, reach for whatever hot sauce or jam is already in your fridge. The whole point of a cracker flight is that there's no wrong way to build one.
