Olasagasti's heritage dates back to the late 1800s when Sicilian Salvatore Orlando introduced long-standing Italian salting techniques to the Basque coast of Spain. Salvatore married Simona Olasagasti, a Basque woman, and together they founded a legacy that thrives today under the stewardship of their grandson, Matteo Orlando, in Markina, Bizkaia.

Rooted in the rich waters of both the Cantabrian and Mediterranean Seas, Olasagasti maintains a centuries-old tradition of artisanal fish preservation. Salvatore Orlando's pioneering techniques continue to be perfected, ensuring each product reflects the family's unwavering dedication to quality. From the cold, wild Cantabrian Sea, known for its flavorful fish, Olasagasti selects only the best catches, brought fresh to their factory near the ports of Ondarroa, Lekeitio, and Getaria. Expert workers then meticulously clean, cook, and pack the fish, following traditional methods passed down through generations.
